  Cocktail of the Month: Calem White Porto with Tonic or Soda
My English friends don’t survive the warm weather that they occasionally get solely by drinking Gin & Tonic. No, their Spring & Summer quaff of choice is often a tall glass of White Porto with Tonic and a wedge of lime, or with Club Soda (what we in Brooklyn call Seltzer, of course) and a slice of lemon and a few mint leaves. Simple, tasty and oh, so jolly easy to make. Nothing at all like the fuss of making tea. This is one that the British got right, and they’ve been tying to keep to themselves. I got a great deal on Cálem White Porto, which is just perfect for mixing up one of these “bloody good” cocktails, so you can save a few pounds. Uh, dollars, I mean. Of course, you can chill the bottle and sip it straight, as a before-meal aperitif. Tradition, and all that, old boy… but at only 20% alcohol, it mixes well and makes a drink that’s “just right” for sunny days.
